Springfield Public Schools food service workers are receiving free training to make meals from scratch using locally sourced food, thanks to a grant obtained by Lincoln Land Community College. A total of 36 District 186 food service workers are taking part in the classes; 18 are participating June 9-12, and 18 are participating July 27-30.
Through a series of four courses totaling 32 hours, training will be focused on scaling recipes; preparing entrees, breakfast items and side dishes from scratch more efficiently, batch cooking in a timely manner; learning different culinary techniques and measuring concepts and teamwork in a kitchen setting. As a culmination of their training, each group will host a luncheon to apply their new skills on Friday, June 12, and Thursday, July 30.
The courses are taught by Greg Christian, sustainable food service consultant, chef, author and entrepreneur. His company, Beyond Green Sustainable Food Partners, provides measured strategies and solutions for organizations interested in making the switch to more sustainable food service platforms..
